Bringing ingredients and technology into India for manufacturers who cannot source locally. Supplier qualification comes first, because a cheap ingredient that fails an audit is not cheap.
Sourcing and procurement
Global suppliers identified and qualified against your specification rather than a catalogue, then procured with volume planning so a successful trial does not turn into a supply problem at scale.
Documentation and clearance
Import licences, FSSAI clearance paperwork and the records a food business operator has to hold, through to customs clearance, bonded storage where it helps, and onward delivery to your plant.

03 · Product Optimization (DOE)
A masala is a set of variables. We treat it like one.
A kitchen batch has one cook and no tolerances. A production run has neither. Eight steps from the original recipe to a process a plant can repeat.

Define objectives
Balanced flavour, maximum shelf life or a specific dietary need. The objective decides which variables are worth studying.

List variables
Every candidate spice and grain, sorted into independent, dependent and controlled before a batch is cooked.

Experimental design
A factorial design to study interactions, two-level to start, expanded where the flavour is complex.

Standardise
Roast duration and temperature per spice, grinding method and particle size, and a fixed blending sequence.

Sensory testing
Small batches to a panel, scoring aroma, taste, texture and overall satisfaction from one to ten.

Collect and analyse
Results recorded per batch, then ANOVA to separate the factors that matter from the ones that look like they do.

Refine and iterate
Proportions and processes narrowed, then the experiment repeated against the reduced variable set.

Finalise and scale
The optimised recipe validated across runs, then tested at batch size for consistency.
