From family secrets to a documented process.
It began in a home kitchen, where the ratio of toasted coriander to hand-pounded chilli was not a recipe so much as an inheritance.
The challenge was never to export a product. It was to preserve an emotion across twelve time zones.
What we do now is put engineering behind ancestral method: measure what the cook does by instinct, work out which variables can move for scale and cost, and hold the ones that cannot. The result is trade-ready food that still tastes like where it came from.
