Nostaljia is the attempt to not make that trade. The benchmark is the family version, cooked the way the family cooks it, measured and recorded before anything is changed for scale, then put through a factorial design and a sensory panel until the production version scores like the original. Freeze-drying and spray-drying hold the aroma that conventional drying flattens. What reaches the shelf is meant to taste like the thing it was copied from.
